Light summer soup

The most ideal soup for the summer season. With fantastic taste and fresh vegetables.

Zucchini and mushurka, new potatoes and fresh carrots, all the values ​​in a single dish.

This is a simple recipe but rich in nutritional value, which in addition to the fantastic taste revitalizes the organism and the whole body as well.

This soup goes fantastically well with toasted bread or homemade pies, as well as fresh seasonal salads.

Preparation of Summer Vegetable Soup

Ingredients 

(The ingredients below are for 4 people – if you prefer, you can also prepare it without meat)

200 g of chicken or beef

Two carrots (medium)

Two potatoes (medium)

2 zucchini (medium)

A medium bowl of mashurka

1 cup of pea tea

2 green peppers

1 onion

4 tablespoons of olive oil

1 l broth (water can also be used)

1 teaspoon of flour

Salt

Parsley or Dill

Preparation 

First, after cleaning them well, Alfapress.al instructs you to cut all the vegetables into small cubes.

Pour the olive oil into a pot and add the thinly sliced ​​onions with the help of a knife.

We cook them until their volume decreases. If you are going to prepare it with meat, add the meat cut into small cubes and sauté for 2 minutes.

Then add all the vegetables. Add the flour and sauté for a few minutes.

Discard salt and broth (or water).

We let them all cook together until the vegetables soften.

At the end, if desired, add finely chopped parsley or dill to the soup when it is served. Served warm and sprinkled with a little lemon juice./ Alfapress.al
