Summer soup with peppers and tomatoes

500 g of peppers
500 g of tomatoes
4-5 tablespoons of oil
2 onions
2 cups of coffee rice
1 bunch of parsley
Salt, pepper


In a pot with fat, saute the onions until they turn yellow, add the peppers cut into strips, saute them on a slow fire, then throw in the peeled and finely chopped tomatoes and saute them together for 5-10 minutes.

Add meat broth or water, salt and black pepper and once they have boiled, add the cleaned rice.

Let the broth cook over a slow fire and serve it sprinkled with finely chopped parsley.
