
Open pie without noodles with leeks

Ingredients :
For the dough base:
240 gr flour
1 tsp salt
1 egg yolk
120 gr butter
1-2 tsp water
For the filling:
1 kg leek
70 gr butter
1 tbsp flour
150-200 ml milk
1 egg white
3 tbsp grated cheese
Salt, pepper
Preparation :
Prepare the dough first and place it in the refrigerator for 30 minutes. Peel the leek and cut it into 2 mm slices, using all the white part and only the beginning of the green. In a large pan, melt 50 g of butter and sauté the leek over medium-low heat for 15-20 minutes, stirring occasionally. In the last few minutes, add salt and pepper, to taste. In a saucepan, melt the remaining butter and add the flour, leaving it on low heat for 2 minutes and mixing. Add the milk little by little, always mixing. In 4-5 minutes, we will obtain a compact béchamel. Beat the egg white into the meringue. In a bowl, combine the leek, béchamel, cheese, salt and pepper and finally the egg white, beating it. Take the dough out of the refrigerator, roll it out in a baking dish, add the leek mixture and smooth the surface. Sprinkle with a little cheese and bake in the oven at 180 °C for 40 minutes.
