Wine dish with eggplant

Ingredients:
1-2 eggplants
200 g chicken/beef
1 onion
1 pepper
2 garlic cloves
2 tomatoes / tomato puree                                                               
1/2 cup water
1 bunch parsley
Red pepper, black pepper
Salt, oregano

Preparation:
Cut the meat into cubes as and vegetables.

First, sauté the chicken or beef marinated with a little salt in a little olive oil. After the meat begins to release its juices, we remove it from the pan and put the finely chopped onion, garlic, eggplants and pepper in the pan.

Add the tomato puree, adjust the taste with salt, pepper, oregano and finally add some lukewarm water. We let the dish cook at a below average temperature and have a little liquid.
