Beef in milk with leeks

Ingredients :

1 kg beef
30 g butter
5-6 tbsp olive oil
3 leeks cut into rings
500 ml milk Salt
, pepper

Preparation :

Tie the meat with a few turns of kitchen twine and season with salt and a good grind of pepper. Fry the meat in oil with butter in a deep frying pan over medium heat. When the meat has taken on color, lower the flame a little, add the leek and leave it for another 5 minutes, turning it often so that it does not burn. Adjust the taste with salt and pepper.

Cover the meat with milk and continue cooking for another 1 hour, until the liquid has run out. Then remove the meat from the pot, pass the sauce through a sieve. We serve the meat in slices with leek sauce, accompanied by peas or potatoes as desired.
