Eggplant with minced meat and cheese
Ingredients:
2 large eggplants
300 g minced meat
1 onion
1 tomato / tomato sauce
1 red pepper
50 g butter
3 tbsp olive oil
300 g pizza cheese
Salt, pepper
Preparation:
Cut the eggplants in half, clean some of the pulp, which we cut into small cubes.
Sprinkle the eggplants with salt, pepper and a little olive oil and bake them in a preheated oven at 200 degrees.
Meanwhile, sauté the minced meat with the onion in a pan. Then we add the tomato sauce and a red pepper in small cubes. Adjust the taste with salt and pepper. Add a little butter and grated cheese to the cubed eggplants and mix well.
Fill the eggplants with a layer of minced meat and the other layer with cheese. Place the pan in the oven at 200 degrees for 10 minutes.
