Stuffed eggplant

4 eggplants
1 carrot
1 red pepper
1 green pepper
2 onions
500 g minced meat
2 tbsp tomato sauce
3 tomatoes
oil Salt
Black pepper
Red pepper

First, clean the eggplants, put them in salted water and then fry them with a little oil. Meanwhile, cut all the vegetables into cubes. We cook the minced meat until it becomes grainy, add the onions, carrots, the inner parts of the eggplants and gradually the tomatoes and peppers. Saute them all by adding the aromatic herbs and spices together with the sauce. We fill the eggplants and put them in the oven at a temperature of 200 degrees Celsius for 50 minutes.
