Grilled eggplants in oil and chili pepper

Ingredients :

2 large eggplants
100 ml oil for frying
1-2 fresh or dried chili peppers
2 bunches of fresh basil
Salt and freshly ground black pepper

Preparation :

Peel the eggplants, cut them into 1 cm slices and place them on the preheated grill at high temperature. Grill all the slices by pressing them with a fork so that the surface sticks well to the grill. After about 30 seconds, turn the slices over, as the eggplant cooks quickly and should not dry out (lightly pierce it with the tip of a knife: if the flesh is soft, the eggplant is done).

Remove the slices from the grill and place them on a plate. In a bowl, combine the oil with the salt, pepper, and chili pepper, whisking with a fork. Drizzle the roasted eggplants with the chili oil and serve warm, garnished with fresh basil.
