Burani with spinach, carrot and pancetta

Ingredients:
1-2 onions
2 garlic cloves
1 carrot
2 lgj rice
200 g pancetta
800 g spinach
Olive oil
Salt, pepper, nutmeg
Aromatic herbs
Preparation:
First, in a pot, we sauté the pancetta, remove it and add a little olive oil to the fat that has released and sauté the finely chopped onion together with the garlic.
Then add the grated carrot and the rice, mix it together with the onion for 2-3 minutes.
Add cleaned and coarsely chopped spinach and aromatic herbs if desired. After the spinach has reduced its volume, adjust the taste with salt and pepper and let it cook at medium temperature.
In the last minutes of cooking, add the pancetta and serve the burani accompanied by a little yogurt or slices of lemon.
