Traditional tespishte

Ingredients :
500 g of butter
100 g of sugar
100 ml of milk
1 teaspoon of soda
3 fresh eggs
500 g of
almond flour
For the sorbet:
500 g sugar
500 ml water
Vanilla
Preparation :
We put a large pot on the fire where we put the butter and sugar. Mix until the sugar caramelizes. Then remove the pot from the heat and let it cool for a few minutes. Add the milk to the pot and put it back on the fire. Continue adding the flour, mix it with a wooden spoon without interruption until the mixture thickens and separates from the sides of the pot.
Once the mixture has thickened enough, remove it from the heat and add the eggs one by one without stopping the mixture.
We sprinkle it with a little flour and start to work it by hand until a compact mass is created. Sprinkle it with granulated sugar from all sides.
Place the dough in a buttered pan, spreading it by hand over the entire surface of the pan. Cut it into rhombuses, add almonds and bake it in the oven.
Meanwhile, prepare
the sorbet by putting the sugar, water and vanilla in a pot. Let them boil until the sherbet thickens. When the cake is baked, let it cool and then serve it.
