Pasta with potatoes

Naples, a city known for its natural beauty and rich cultural heritage, but also offers another asset – excellent Italian gastronomy. Ingredients
200g tube pasta
2 large potatoes
2 tablespoons of olive oil
1 clove of garlic
400g of boiled tomatoes
1/2 teaspoon of salt
1/2 teaspoon black pepper
1/2 teaspoon of salt
50g of goat cheese
Preparation
Start by cutting the potatoes into small cubes, about 1.5 cm thick. Place them in a bowl of cold water to prevent oxidation and set aside.
In a deep pan, heat the olive oil, add the minced garlic and fry for a few seconds until it starts to release its delicious aroma.
Add the cooked tomatoes to the pan and simmer for 10-15 minutes, stirring constantly.
Meanwhile, while the tomatoes are cooking, boil the potatoes in another pot of salted water until soft (about 10-12 minutes). Then strain them.
Add the boiled potatoes to the pan with the tomatoes and mix them together with the oil and garlic. Add salt, black pepper and let everything boil for 5-7 minutes together.
During this time, boil the pasta following the instructions on the package you have chosen. After they are boiled, transfer the pasta to the pan, adding a little of their water. Stir well to combine all the ingredients and let it simmer together for 1-2 minutes.
Serve the pasta with hot potatoes and, if desired, add some cottage cheese for extra flavor.
