Prizren's Casserole

Ingredients:
1 kg lamb
2 large onions
2 green/red peppers
1 zucchini
1 eggplant
2 large tomatoes
500 g okra
Olive oil or melted lard
Salt, black pepper, red pepper
Meat juice or boiling water
Preparation:
Wash the meat, pat dry and sprinkle with salt and pepper. Fry lightly in oil or fat until golden brown. In a deep pan, first place the onions and a little oil. On top of the onions, place the peppers, zucchini, eggplant, tomatoes and fried meat in order. On top of all that, carefully place the okra (we have left the okra in water with vinegar for a while beforehand so that they do not stick) on the surface. Pour the hot liquid until it covers about 2/3 of the pan. Bake in a preheated oven at 160°C for 2–3 hours.
