Cinnamon Oat Muffins

These Oatmeal Apple Cinnamon Muffins are perfect for a simple and healthy breakfast all week long!
Ingredients:
3 cups (300 grams) oats
1 teaspoon baking powder
1 1/2 teaspoons cinnamon
1/4 teaspoon salt
1 cup (240 ml) almond milk
2 eggs
1/2 cup maple syrup
1 teaspoon vanilla extract
1 apple chopped medium
Preheat the oven to 180°C. Spray a muffin pan with a little oil and set aside.
Combine the oats, baking powder, cinnamon and salt in a large bowl and mix until well combined. In another bowl, whisk together the milk, eggs, maple syrup, and vanilla extract until thoroughly combined. Add the dry ingredients to the wet ingredients and mix until well combined. Add the chopped apple and mix gently.
Divide batter evenly among 12 muffin pan cavities. Bake at 180°C for 25-27 minutes, or until the top is golden brown. Remove from oven and let cool.
You can keep them in the fridge for a few days and enjoy them during the week for breakfast or a light meal.
