Eggplant puree with garlic
Ingredients:

1 kg of eggplant
1 head of garlic
4-5 tbsp olive oil
A little chili
pepper Salt

Preparation:

Bake the eggplants in the oven or in a pressure cooker with a little oil. We remove the skin, finely chop them and then mix them in a porcelain container with a wooden spoon, adding crushed garlic, olive oil and, if desired, some chili pepper.

If we want puree, we can also add fresh tomato juice or finely chopped tomatoes.
