Potato and red cabbage soup

Ingredients :

400 gr red cabbage
2 medium potatoes
1 white or red onion
2-3 tablespoons olive oil / butter
1 liter of vegetable stock / water
200 ml of cooking
cream Salt and pepper to taste
A little apple cider vinegar or lemon for freshness

Preparation :

In a pot, fry the onion in oil or butter until it softens and turns slightly golden. Add the potatoes and cabbage. Stir for a few minutes until they start to soften a little. Add the vegetable stock or water and let the vegetables simmer over medium heat for 25-30 minutes. Turn off the heat and add the pan. For a thicker and smoother texture, you can put the soup in a blender. Finally, adjust the taste with salt, pepper and, if desired, a little vinegar or lemon to give it a slightly tangy taste.
