Creoles with cheese

Ingredients:
500 gr corn flour
150-200 gr white cheese
2-3 tablespoons olive oil or melted butter
Warm water (enough to form a dough)
A pinch of salt
Preparation:
In a large bowl, add the cornmeal and a little salt. Gradually add warm water, mixing by hand or with a wooden spoon until a soft dough is formed, not too liquid, but not too hard either. Add the melted oil or butter and mix well. Finally, add the crumbled white cheese to the dough and mix until evenly distributed. Grease a baking pan with a little oil or butter, spread the dough on the pan, pressing lightly with your hand or a spoon to equalize the thickness (about 2 cm). Bake in a preheated oven at 200°C for 35-40 minutes, until it turns golden on top and is firm on the bottom. Cut the krelana into square or triangular pieces and serve warm with fresh yogurt, buttermilk or mountain tea.
Tip from Albana: For a more authentic taste, you can use village butter instead of oil. In some areas, they add a little cottage cheese to the krelanas or mix the cheese with a little fresh parsley for flavor.
