Ingredients
500 gr soft wheat flour, 170 gr semolina wheat flour, 1 boiled potato (about 80 g), 400 ml water, 1 tablespoon yeast, 1 tablespoon salt, 200 gr cherry tomatoes, 5 tablespoons extra virgin olive oil, oregano as desired.
Preparation
1. Boil the potatoes, peel the skin and puree with the help of a fork.
2. In a deep bowl pour the two types of flour, yeast and initially 300 ml of water. Work the dough.
3. Add the mashed potatoes, 4 tablespoons of olive oil and the remaining water. Continue to knead the dough until the mass becomes homogeneous.
4. Divide the dough into two balls weighing 250 gr each.
5. Place the dough balls in oiled pans with a diameter of 20 cm each and let stand for 3 hours at room temperature.
6. At the end of this time work the dough again by pressing it with your fingertips and place on top the cherry tomatoes cut in half.
7. Season with salt, oregano and olive oil. Let them come back for 30 minutes.
8. Bake in the oven at 220 degrees for 25 minutes.
