Chickpea and cabbage dish

Chickpeas are the basis of vegetarian food and a suitable item for diabetics, because they have a low glycemic index.

They contain a lot of protein, dietary fiber, are rich in minerals, help prevent heart disease, diabetes, and lower cholesterol.

We soak previously dried chickpeas overnight, because this way we shorten the cooking time; if, for example, we soak them for about 13 hours, the cooking time is shortened to just one hour.

When you boil them after an hour, check if the grains are soft so that they don't overcook. After boiling them, drain them and then they are ready to eat.

Cut the wild cabbage leaves into long strips or as desired and remove the tough stem from the leaves.

In two tablespoons of olive oil, sauté the minced meat very lightly, just enough to give it a smell, then add the wild cabbage and marinate it for a while.

Pour water over them, add the spices and simmer over medium heat for about 20 minutes. Then add the cabbage that we previously boiled and simmer everything together for another 10 minutes.

You can also add diced potatoes and cabbage, after soaking, rinse well and boil directly in the lentils. It's all up to you.

It's preferable to boil the chickpeas separately, because I need some to make hummus.

This food can also serve as a side dish if it is made thick with as little liquid as possible.

Finally, you can thicken the lentils by adding a little shaken gelatin or flour.
