Turkish delight

Ingredients:

500 g sugar
250 ml water
100 g cornstarch
1 teaspoon lemon juice
1 teaspoon rose water or vanilla
Natural coloring (optional)
Peeled nuts, almonds or pistachios
For dusting: mix powdered sugar with starch
Preparation:
In a saucepan, mix the sugar with half the water and the lemon juice. Let it boil slowly for about 10 minutes, until it thickens like syrup. Meanwhile, mix the starch with the rest of the water in a separate bowl, beating well so that no lumps form. Add the starch mixture to the syrup slowly, stirring constantly. Reduce the heat to medium and mix for 40-50 minutes, until the mixture thickens greatly and becomes elastic and gelatinous. Finally, add the rose water or the essence we want, as well as the coloring and nuts if using. Spread the mixture on a baking sheet coated with starch to a thickness of about 2 cm. Let it cool for a few hours or overnight and then cut the lokum into cubes and roll them in a mixture of powdered sugar and starch to prevent them from sticking.
