Polenta with sausage and leeks

Ingredients:
500 gr polenta
3 liters of water
5 leeks
4 sausages
400 gr tomatoes
1 teaspoon tomato concentrate
Salt, pepper and olive oil to taste
Preparation:
In a frying pan, sauté the leeks cut into rings with a little water until soft. Add olive oil and the sliced or minced sausages, frying them well until golden brown. Add the tomatoes and the concentrate, adjust the taste with salt and pepper and let it simmer slowly so that the sauce thickens and takes on flavor. Meanwhile, in another pot, boil the water with a little salt. When it boils, gradually add the polenta, stirring vigorously with a wire whisk or wooden spoon to avoid lumps. Cook for a few minutes until creamy. Serve on a plate with the leek sauce.
