Meatballs with spinach and potatoes

Ingredients:

180 gr fresh spinach
350 gr boiled potatoes
2 tbsp olive oil
1 egg + 1 yolk
50 gr grated cheese
150 gr breadcrumbs
Salt, pepper
Oil for frying

Preparation:

Boil the spinach in salted water for about 3 minutes, drain well and squeeze to remove excess water. Boil the potatoes with their skin on for 25–30 minutes, then peel and mash them. In a bowl, mix the potatoes with the spinach, eggs, Parmesan cheese, salt and pepper. If the mixture is too soft, add a little breadcrumbs or grated cheese. Form meatballs with your hands, roll them in breadcrumbs and fry in hot oil until golden brown. Place them on kitchen paper and then serve warm.
