
Stuffed peppers

Peppers stuffed with rice remain one of the most favorite recipes of Albanians, especially during the summer season when they are cooked by the hands of housewives.
It is one of the oldest and most delicious dishes of traditional Albanian cuisine. Fantastic to enjoy and very simple to prepare at home.
Ideal for a delicious lunch and dinner meal, the stuffed peppers are fantastically combined with fresh seasonal salads but also with various flavors of Albanian cuisine.
Alfa suggests below the typical recipe for preparing peppers stuffed with rice and minced meat. An ideal way to serve the whole family and loved ones.
Peppers Stuffed with Rice
Ingredients
5-6 peppers for filling
2 medium onions
4-5 cups of coffee rice
1 cup of tea minced meat
salt, pepper
1 bunch of parsley
2-3 medium tomatoes
A few cloves of garlic
Oregano
Preparation
The peppers are sorted with pulp and large, washed, cut off the cap-shaped tail, remove the seeds.
Fry them lightly with olive oil and place them one by one in the pan.
Saute the finely chopped onion in a pot with olive oil. After the volume of the onion decreases, add the finely chopped tomatoes and sauté for a few minutes.
Alfa instructs you to add the minced meat and garlic and sauté until the mass remains in its own fat.
Add the salt, pepper, parsley, oregano and water and let it boil for 15 minutes, then add the rice and let it boil halfway and the mixture is liquid.
If you prefer, you can also use fennel instead of parsley.
Fill the peppers with the prepared mixture in turns, but not completely, as during cooking the rice increases the amount and the filling comes out. If there is excess rice from the filling mixture after filling the peppers, pour the pan around the peppers.
At the bottom of the pan, add a little salt, a little broth or water and put it to bake in a preheated oven.
