Eggplant rolls with cottage cheese
Ingredients :
2 large eggplants
250 g ricotta or thick cottage cheese
1 egg
100 g mozzarella cheese
50 g parmesan cheese
1-2 tbsp parsley or basil
1 clove garlic
300 ml tomato sauce
A little olive oil
Salt, pepper
Preparation :
Cut the eggplants into thin slices lengthwise, place them in a baking dish on baking paper, brush them with a little olive oil and salt and bake them in the oven at 200°C for 10-15 minutes until they soften slightly. In a bowl, mix the ricotta, egg, grated mozzarella, parmesan cheese, parsley (or basil), garlic and a little salt and pepper. Mix well until a homogeneous mass is formed. Place a spoonful of filling on one end of the eggplant slices and roll them into a roll. In a baking dish, spread a thin layer of tomato sauce. Place the filled rolls, pour some sauce over them and finally sprinkle with some mozzarella. Place the dish in the oven at 190°C for 20-25 minutes, until the cheese melts and turns golden brown.
