Cornmeal pancake with leeks

Ingredients :

500 gr yellow cornmeal
2 cups yogurt
3 leeks
1 bunch parsley and dill
1 tsp baking soda
3 eggs
300 ml warm water
4 tbsp olive oil
1 tsp red pepper
Black pepper
Salt

Preparation :

Finely chop the white part of the leek and sauté it in a little olive oil. As soon as the leek starts to reduce in volume, sprinkle it with salt and pepper and leave it to soften. Meanwhile, add the baking soda, olive oil and warm water to the cornmeal. Work well until a cohesive dough is formed.

Place the cornmeal dough in a baking dish greased with a little olive oil. Place the sautéed leeks sprinkled with chopped parsley on top. Beat the eggs together with the yogurt and add to the pan over the leeks. Dust the surface of the pie with a little cornmeal and bake in a preheated oven at 180 degrees Celsius.
