Salad with beets, pomegranate and red cabbage

Ingredients:

1 small head of red cabbage
2–3 carrots
2–3 cooked beets
1 bunch of parsley
1 pomegranate
4–5 tablespoons of olive oil
Juice of 1–2 lemons
Salt, black pepper
Bulgur as desired (optional)

Preparation:

Finely chop the red cabbage, cut the carrots into strips and then into cubes, and boil the beets and cut them into slices. In a large bowl, combine all the ingredients, add the finely chopped parsley and pomegranate seeds. Squeeze the lemon into a small bowl, add olive oil, salt, mix well and pour over the salad. If desired, you can also enrich the salad with a little boiled bulgur.
