Oatmeal and beetroot crepes

Ingredients :

100 g ground oats
1 small beetroot, boiled or baked
2 eggs
200 ml milk
1 tablespoon olive oil
1 pinch salt
½ teaspoon baking powder (optional)
Filling of choice

Preparation :

Place the boiled beetroot in a blender and blend until smooth. Add the eggs, milk and olive oil, and blend again. Then add the oat flour, salt and baking powder. Mix until a smooth mixture forms. Let the dough rest for 10 minutes so that the oats soften. In the meantime, heat a non-stick pan and lightly grease it with oil. Pour a ladle of dough and cook the crepe on both sides, about 1 minute per side. Fill it with your choice of savoury or sweet filling.
