Summer salad with fresh vegetables and white cheese
Ingredients :
2 ripe tomatoes
1 large cucumber
1 red or white onion
1 green or red pepper
100 g white cheese
10-15 pitted black olives
2 tablespoons olive oil
1 tablespoon apple cider or lemon vinegar A little
dried oregano
Salt, pepper, aromatic herbs
Preparation
Cut the tomato, cucumber and pepper into slices or cubes as desired. Cut the onion into thin rings and if it is too hard, leave it in water with vinegar for 10 minutes.
In a large bowl, mix all the vegetables, olives and cheese. In a small cup, mix the olive oil, vinegar/lemon, oregano, salt and pepper.
Marinate the salad, mixing lightly so that the cheese does not break down. At the end, you can add aromatic herbs for more freshness and flavor.
Albana's Tip: This salad goes wonderfully with toasted bread, grilled meat, or as a light meal on its own. You can also add boiled chickpeas, lentils, or a little quinoa for more value.
