Peppers stuffed with vegetables

Ingredients:

– 12 peppers,
– 4 onions,
– 500 grams of tomatoes,
– 1.5 dl of oil,
– 2 carrots,
– parsley,
– 4-5 potatoes,
– 100 g of rice,
– salt,
– pepper,
– spices.

Preparation:

1. Clean, chop and fry the onion in oil, then add the finely chopped carrots, parsley, rice, chopped potatoes, salt and pepper, mix everything and after a few minutes remove from heat.

2. Peel the tomatoes, cut them into cubes and then add them to the potato mixture. Fill the cleaned peppers with this mixture.

3. Place them in an oiled baking dish and bake for 45 minutes at 200 degrees.

4. Serve with Greek yogurt or sour cream.
