Homemade spinach-flavored pasta

Ingredients :

300 gr flour
450 gr fresh spinach
2 eggs
Butter
Salt

Preparation :

Boil the spinach in water with a little salt without letting it boil too much. Drain it well and let it cool. Then squeeze it to remove the water and finely chop it with a knife. Add the eggs and flour and knead the dough well. Sprinkle the work surface with a little flour. Press the ball of dough back and forth with the base of the palm of your hand. Fold the pressed dough inwards, turn it a quarter turn and repeat the action. Knead for 10 minutes until it becomes soft.

Then place it in a bowl, cover it with a plate and let it rest for about 15-20 minutes. Place the ball of dough on a clean work surface and press it down slightly with your hands. Support the rolling pin, pressing lightly but firmly in the center, and roll out the dough from the opposite side. When the dough has taken on a wide, round shape, 1-1.5 cm thick, wrap it around the rolling pin, lifting the side facing you and holding the side closest to you firmly in place with your hand.

When we unroll the dough, we carefully pull the dough, then we open it by turning it a quarter turn and repeating the action. We continue to roll and pull the dough until we obtain a thin sheet like a veil. Finally, we collect the rolled dough and cut it with a knife 2 cm. We add water to a pot and a little salt. When it boils, we throw in the pasta and let it boil for 8 minutes. In the meantime, melt a little butter, drain the pasta and sprinkle it with grated cheese or cream cheese.
