The special recipe for the “1000 Crepes” cake

The crepe cake, or cake with crepes, is an icon of French desserts that returned to the spotlight in the 1980s.

Today it is known as " a thousand crepes " even though there are only about 20 crepes stacked on top of each other.

When it comes to the cooking process, this dessert may take a little time to prepare, but for the most part the dessert sits chilling in the refrigerator.

The most " difficult " part of the preparation is when you cook the crepes, but with the right practice, nothing is as difficult as it sounds.

Ingredients

1/2 cup unsalted butter, melted and slightly cooled

8 eggs

1 teaspoon vanilla

3 cups flour

1/4 cup granulated sugar

1 teaspoon salt

1/2 cup warm water

3 cups of milk

For the Filling

1 and 1/2 cups of heavy cream

226 mascarpone or cream cheese

1 cup confectioners' sugar

1 teaspoon orange peel

1 tablespoon fresh orange juice

Blueberries for garnish (optional)

Walnuts for decoration (optional)

Preparation

Start preparing the recipe by preparing the ingredients.

Combine the butter, eggs, vanilla, flour, sugar, salt, water, and milk in a mixer.

Process until all the ingredients are combined.

Transfer the mixture to a large bowl and cover. Refrigerate for at least 2 hours or preferably overnight.

Heat a non-stick pan. Whisk the batter again to combine the ingredients.

Once the pan is hot, add 1/4 of a cup filled with the batter you prepared to its center.

As you add the batter, tilt and rotate the pan so that a thin layer covers its surface.

Cook until bubbles form on the surface of the crepe and the edges are lightly browned, about 1 minute.

Slide a spatula around the edges and carefully flip the crepe over to the other side.

Leave it on the heat for about 30 more seconds and then transfer it to a plate to cool. Repeat the same with the remaining dough.

If desired, separate the crepes with kitchen paper to prevent sticking.

You should make about 20 to 25 crepes.

For the filling:

Combine the cream cheese and mascarpone in a bowl and mix on medium-high speed until combined, about 1-2 minutes.

Slowly add the confectioners' sugar and beat on a lower speed. Add the orange zest and juice.

Taste the filling and add orange juice if desired.

To form the cake, place one of the crepes on a flat serving plate.

Spread about 3 tablespoons of the filling over the crepe and then place the other crepe on top.

Repeat the process until you have finished all the crepes.

Cover the cake with plastic wrap and refrigerate for at least 1 to 8 hours.

After this time, take the dessert out of the refrigerator and finish by spreading a layer of cream on it and decorating it with nuts, a few blueberries, or any other fruit of your choice./ Alfapress.al
