Lamb fricassee

Ingredients :

1 kg lamb
2 tbsp olive oil or butter
2 medium onions
2 leeks
2 cloves garlic
1 bunch parsley and dill
2 eggs
1 tablespoon flour (optional, for thickening)
Juice of 1 lemon
Salt and pepper to taste
Water or stock

Preparation :

In a pot, heat the oil or butter and fry the pieces of meat until they turn golden brown on all sides. Add the onion, leek and garlic and sauté until soft. Add salt, pepper and water to cover the meat. Cover the pot and let the meat simmer on low heat for about 1–1.5 hours. In a bowl, beat the eggs with the lemon juice. If you want the sauce to be thicker, dissolve a spoonful of flour in a little cold water and add it to the eggs. Take a little of the hot meat broth and slowly add it, stirring constantly so as not to cut the eggs. Pour it into the pot, stirring carefully for a few minutes on low heat until it thickens. Finally, add parsley and dill for more flavor and fresh aroma.
