Smoked cod
The basis of today's Alfa recipe is smoked cod, or as we know it in our traditional cuisine, "cod". But what makes this recipe seem futuristic is the mixing of fondant chocolate with candied lemon, raisins, cinnamon, pine sticks, lemon, etc.

Ingredients
1 kg smoked cod, 100 ml olive oil, 60 g flour, 1 white onion, 50 g pine sticks, 50 g raisins, 3 salted and cleaned sardines, 1 bay leaf, lemon peel, 1 teaspoon sugar, a little cinnamon, ½ candied lemon in thin slices, 1 teaspoon fondant chocolate, pepper, 1 l fish stock, 200 ml hot white wine, breadcrumbs, salt.
Preparation
1. Soak the cod in water for 24 hours to remove the salt.
2. Clean the fish from the skin and bones, after draining and drying it with a kitchen towel.
3. Cut the cod into large pieces. Pass it in flour.
4. Fry the pieces in a deep pan. Place the pieces of fish next to each other, leaving no empty space in the pan.
5. Pour over the previously chopped and fried onions. Add the bay leaf, cleaned and chopped sardines.
6. Add pine sticks, raisins, citrus slices, grated chocolate, salt & pepper.
7. Cover with hot fish stock and cook on low for about 3 hours.
8. Do not stir, just shake to stop the fish from sticking to the pan. Add more fish stock if needed.
9. When the liquid has been absorbed, pour a glass of very hot white wine over the fish.
10. At the end, sprinkle with breadcrumbs and put in the oven at 180 degrees, until a golden crust is formed.
11. Serve warm with polenta.
