Pispili with leek according to Korça tradition

Ingredients:
500 g of corn flour
1 kg of leek
2 eggs
100 g of cottage cheese or cheese
1 glass of milk
1 glass of yogurt
Olive oil
Salt, pepper
Preparation :
First we prepare the pispilia filling. Sauté the leek well, adjust it with salt and pepper and let it cool. In the meantime, prepare the pispilia dough, which should be a homogeneous, fluid mass, not hard. Put corn flour, a little olive oil and water in a bowl. We stir it well and spread the dough by opening it with our hands in the entire space of the pan, which we have painted with a little oil. Add the eggs, yogurt and crumbled cheese to the sauteed leek.
Place the filling on the corn patty that we opened in the pan and level it well. Mix a little milk, a little yogurt and a little corn flour in a bowl. Mix it well and add it to the pispilina, which we set to bake in a preheated oven at 180 degrees Celsius until it gets a nice color on the surface.
