
Chicken with crumbs

Country chicken crumb soup
Ingredients :
1 chicken or country bird
4 tablespoons olive oil
3-4 cloves garlic
1 tablespoon
butter Juice of 1 lemon
Salt, black pepper
For the crumbs:
6 tablespoons flour
2 egg yolks
A pinch of salt
Preparation :
First, prepare the crumbs. Combine the flour with a little salt. Beat two egg yolks and add them to the flour. Mix the flour with your hands, rubbing it with both palms of your hands, until you get small grains. Place the crumbs in a pan and let them stand for 20 minutes. Meanwhile, clean the chicken or country bird and divide it into pieces. In a pot, add the olive oil and the chicken pieces to fry for a few minutes on both sides. Add a little salt and water until all the chicken parts are covered and let them cook for 20 minutes. Meanwhile, in a pan, add a tablespoon of butter and fry the crumbs until they turn yellow. Then add them to the pot where you have the chicken and its juice and put them back on the fire to cook together until the soup thickens. Once the liquid has curdled and thickened slightly, add the garlic, lemon juice, and black pepper and remove from heat.
