Soup with lentils and vegetables
If you love lentils, then this recipe is for you!
250gr or 1 glass of water, lentils
5 glasses of vegetable juice or water
2 carrots cut into small pieces
½ bunch of spinach 1 leek
2 cloves of crushed garlic
2 sprigs of thyme, chopped
1 bay leaf
1 tablespoon of olive oil
Salt , black pepper
1 tablespoon fresh parsley
Lemon to serve.
In a pot with a little oil, fry the leek for 4-5 minutes.
Add the garlic and stir for 1 minute.
Add well-washed lentils, carrot, vegetable stock or water, thyme and bay leaf.
Put the lid on and leave them on the fire for 25-30 minutes.
Now add chopped spinach and leave for 6-8 minutes.
When you see that the soup is done, remove the thyme and bay leaf.
Serve warm with some parsley on top and a few lemon wedges on the side for extra flavor.
