Linguine with shrimp and zucchini

Ingredients :

400 gr linguine Ola
250 gr shrimp
2 green zucchini
10-15 cherry tomatoes
1 small glass of cognac
2-3 cloves of garlic
Extra virgin olive oil
Salt, pepper
Chili pepper to taste

Preparation:

Bring a pot of water to a boil to cook the pasta. Add salt only when the water is boiling. Once the water is boiling, add the linguine and cook until al dente, no more.

Meanwhile, clean the pumpkins, cut them in half lengthwise and then into diagonal slices. Set aside.

Heat a little olive oil in a pan.

Quickly fry the shrimp, cleaned and split on the back. Spray with a little cognac, let it evaporate and transfer to a plate. In the same pan, add the garlic and let it fry a little together with the zucchini. Add a little chili pepper if you like. Transfer to the plate where the shrimp are.
Add a clove of garlic to the pan and let it fry a little.
Remove as soon as it starts to fry and add the tomatoes cut in half. Leave them in the pan, stirring constantly and adding a little water 1 or 2 times. When the tomatoes are ready, add the shrimp and zucchini. Stir well and then add the linguine, mix until they are well combined with the rich sauce. If you see that they look a little dry, add a little fresh olive oil and mix until the oil is absorbed homogeneously.
