Black rice salad

Black rice salad

Ingredients:

1 cup black rice
1 cucumber
1 red pepper
½ cup boiled corn
1 carrot
2 tablespoons olive oil
1 bunch parsley
Small tomatoes
Juice of ½ lemon
Salt and pepper to taste
Toasted sesame seeds
Preparation:

Rinse the rice with cold water and put it to boil in boiling water for about 50 minutes, until tender. Then drain and let it cool. Meanwhile, chop the vegetables according to the desired size. In a large bowl, combine the black rice with the chopped vegetables and the boiled corn. Prepare the dressing, mix the olive oil, lemon juice, salt and pepper. Pour it over the salad, stir well and sprinkle with sesame seeds and parsley.
