Witch Soup

Ingredients :

300 gr offal
3 lgj rice
2-3 green onions
50 gr butter
1 egg
1/2 lemon juice
1 bunch of
dill Salt, black pepper

Preparation :

After cleaning the meat offal, blanch it in boiling water, then drain and cut it into small cubes. In a pot with butter, sauté the green onions until they reduce in volume, add the offal and continue sautéing for a few minutes. Then add a little of the offal cooking liquid and the rice. Let the soup simmer for about 15 minutes. Adjust the taste with salt and pepper and then chop it with egg and lemon. Finally, add finely chopped dill and fresh black pepper.
