Vegetable soup

Ingredients :

1 medium onion
2 carrots
1 potato
1 zucchini 1
tomato
1 red or green pepper
1 handful spinach
1 cup peas/cauliflower (optional)
1.5 liters of water or vegetable stock
2 tablespoons olive oil
1 teaspoon oregano or thyme
1 clove garlic
Juice of half a lemon
Salt and pepper to taste

Preparation :

In a pot, heat the olive oil and sauté the onion with the garlic. Add the carrots, potatoes and pepper. Continue sautéing for a few minutes. Then add the tomato and let it soften. Add the pumpkin, peas and any other vegetables you have chosen for the soup. Add the water or vegetable stock, salt, pepper and oregano. Let the soup simmer for about 20-25 minutes, at the end add a little lemon juice and serve warm with some toasted bread.
